Triple Chocolate Brownie Cookies

I have a hard time baking anything that comes from a package.  Perhaps, I’m too hard on myself, but I feel like it’s bootleg baking.  Also, hardly anything from a package tastes as good or better than anything made from scratch.  I get that not everyone has the time to create love from scratch, sometimes we have to create love from a box.  This recipe is for my girlfriends that are not into baking, but find themselves needing to contribute to bake sales, birthday parties, potlucks and other random baking obligations.  That’s where this recipe comes in.  It is scrumptious, will impress your friends, and will satisfy any chocolate craving.

Buy cupcakes from the cute bakery in town, or b.) bake something from a box.  I promise!  Take the time you’ll save and grab an ice cream cone with your kid.  No guilt required!  You are an amazing, super women, and that won’t be undermined by this delicious and satisfying, super easy Tripe Chocolate Brownie Cookie recipe.  Also, no one will suspect this came from a box!  Your secret is safe with me.

Triple_Chocolate_Brownie_Cookie_Recipe_IngredientsSometimes we just need a quick fix and we don’t want the hassle of busting out all of the necessary ingredients and dishes to bake from scratch.  Sometimes, I NEED chocolate and/or brownies and don’t want to wait the 45 minutes to an hour that it takes to bake them.  Here is my solution: Triple Chocolate Brownie Cookies from my favorite from-a-box brownies: Ghiradelli Triple Chocolate Brownies.

Triple_Chocolate_Brownie_Cookie_Recipe_MixWith just a few modifications, turn  brownie mix into cookie mix.  It’s so simple, all you need is vegetable oil, water and 1 egg.  It’s just like the box recipe, except reduce the water from 1/3 of a cup to 2 tablespoons so that it creates more of a dough rather than a batter.

Triple Chocolate Brownie Cookie Recipe

1 package of Ghiradelli’s Triple Chocolate Brownie Mix
1/3 cup Vegetable or Canola Oil
2 Tbsp. Water
1 Egg

Preheat oven to 325°F.   In a mixing bowl combine all ingredients and mix until combined.  Use a cookie scoop and place them 2 inches apart on a cookie sheet.  Bake for 12-13 minutes.  I always bake these exactly 13 minutes and rotate them half way through to make sure they bake evenly.  This will create slightly crispy edges and a chewy center.  If you want a more fudgey center, reduce the baking time a tad.

Make this recipe your own.  Like walnuts?  Throw some of those bad boys in there.  Bits of chewy caramel, or peanut butter?  Have at it, swirl those luscious ladies through that batter like it’s going out of style.  Dip the bottoms of these baked little ladies in melted dark chocolate or white chocolate and place them on parchment paper to set. (As if you’d be able to wait that long!)  Is it Christmas time?  Sprinkle the top of these cute mounds with crushed peppermint candies.  These cookies are adaptable to whatever it is you’re craving, and they’re so easy to make, it’s practically instant gratification.  Enjoy and come back and share your favorite variation.
